This mascarpone pancake recipe is not only delicious but also really soft and rich in texture that it probably will the only pancake recipe you’ll ever need! They truly are the tastiest pancake recipe of all time and easy to prepare and perfect for a lazy Sunday breakfast. This is definitely the best pancake recipe I came across and wanted to share. These pancakes have mascarpone cheese to really give them that moist and delicious texture. Also make sure to use some good extra virgin olive oil to really uplift the flavors.
1 1/4 Cup Flour
4 tsp Baking Powder
Pinch of salt
4 Tbsp Extra Virgin Olive Oil (I use Zeytin EVOO)
2 Eggs, Separated
2/3 Cups Mascarpone Cheese, Room Temperature
1 1/4 Cup Milk
2 Tsp Vanilla Extract
Sift all the dry ingredients together.
In a separate bowl, mix all wet ingredients together, minus the egg whites.
Combine the dry ingredients to the wet mixture, set aside.
Using a standing mixer, whisk the egg whites in a separate bowl until it forms stiff peaks.
Add the egg whites to the batter.
Heat a non-stick pan with a little Extra Virgin Olive Oil - set the heat to medium, and drop about 1/4 cups of the batter on the pan. Cook until you see bubbles form on the top - flip over and cook until the bottom turns light brown.
Serve warm with either fresh berries or with a berry compote.Enjoy!
