Irish Flatbread also known as Boxty is a flatbread made with cooked mashed potato and raw grated potato and flour. It is similar to a Pancake. Ingredients
- 2 Potato large, peeled and cubed
- 1 Potato large, peeled and grated
- ½ cup Flour All Purpose Flour
- 2 tbsp Rice Flour
- 1/2 teaspoon Baking powder
- 1/2 teaspoon Salt for seasoning
- 1 pinch Pepper for seasoning
- 1/2 teaspoon Sesame Seeds for garnish, optional

Instructions
- In a pot add water and potato cubes and boil till the potato is completely cooked about 10-15 mins.
- Drain the potatoes, let it cool down a little bit but not completely cool down and mash the potatoes nicely.
- In a mixing bowl add the mashed potato, grated potato, garlic powder, Olive oil and season with salt and pepper.
- Add in the all purpose flour, rice flour, baking powder and combine the well with the potato mixture and make a smooth dough. Cover the dough and set aside for 10-15 mins.
- Divide the dough into 3-4 portions and roll them into a ball. Place the dough in the greased baking tray and flatten them with your fingers. Sprinkle the sesame seeds and chilly flakes over the bread.
- Preheat oven @180° for 10 mins. Bake the bread in the preheated oven for 25 mins.
Notes
- You can cook in a griddle or a flat tawa with drizzle of little oil/butter.You can add spices to make it more flavorful.
