Recipe Notes

Additional Tips

  • For extra creaminess without adding dairy, blend half of the cooked corn with a portion of the soup, then return it to the pot; this will thicken the base while keeping the soup light.
  • If you prefer a spicy kick, stir in a small amount of finely chopped green chili or a dash of chili oil just before serving—this complements the tangy tomato and sweet corn flavors beautifully.
  • For a heartier meal, add cubes of silken tofu or shredded cooked chicken after simmering the soup; let them warm through for a protein boost without overpowering the delicate corn flavor.
  • Garnish each bowl with a swirl of coconut milk and a sprinkle of toasted sesame seeds to give the soup a subtle richness and an appealing presentation, perfect for impressing guests.
