Swiss Chard Chips, Kale chips were hot sometime back but no one thought about the Beet Green chips which are so humble that they are readily available through out the year. And what do we do, We just use the Red beet root and throw these greens. Which are rich in phosphorus, zinc and great source of fiber (Which I found on the internet) but for me there is a simple rule any greens are always good and I am not throwing away any part of food. I wish I can use Peel of each vegetable to make something. But here is a simple Beet green chips recipe which is quick, easy and simple to make.

Ingredients
  

  • Beet root leaves Beet greens - 1 bunch
  • Rock salt crushed just enough to sprinkle
  • Olive Oil 1 tablespoon
  • Crushed Roasted Peanuts Optional
  • Crushed fresh Black Pepper to sprinkle

Instructions
 

  • Clean and wash Beet greens thoroughly and pat dry it with help of paper towel. Its always good to snip off the end of the stems which are usually thick and would taste bitter.
  • Sprinkle crushed rock salt and freshly ground black pepper.
  • Drizzle olive oil and put in the roasted ground peanuts which is completely optional. Spread it on Aluminum foil on the baking tray.

  • Bake it for 5 minutes and check. If required bake for another 5 minutes. They can quickly burn if not checked so it is always good to start for 5 minutes and if needed bake for 5 more minutes.
