This is one of my favorite non veg recipe. It is simple and easy to cook. Good for beginners as it does not involve lot of different preparations and ways of cooking.

Ingredients
  

  • 1 kg Chicken
  • 2 to 4 Bay Leaves
  • 4 Black Cardamom
  • 10 to 15 Black Pepper seeds
  • 8 Green Cardamom
  • 1 Star Anise
  • 1/2 inch Mace javitri
  • 1 inch Cinnamon stick
  • 1/2 teaspoon Caraway Seeds shah jeera
  • 4 Cloves
  • Coriander Seeds Crushed
  • 5 to 6 Onions medium size
  • 1 inch Ginger
  • 10 to 15 cloves Garlic thick
  • Green chilies optional
  • 3 to 4 Dry red chilies or as per taste
  • 1 teaspoon Turmeric Powder
  • 5 to 6 tablespoon Mustard oil
  • 3 to 4 tablespoon Curd
  • 1 bunch Green Coriander

Instructions
 

  • Wash chicken. In a bowl mix curd, half of the salt , turmeric, finally chopped ginger, garlic and green chilies. Rub this mixture on the chicken thoroughly and keep it aside for 30 min.

  • Heat oil in a wok. While the oil is heating chop onions into thin slices. When the oil is ready add all the whole spices starting with bay leaves and then immediately add sliced onions. Add remaining salt to the onions. Cook onions till golden brown.
  • Add marinated chicken to it and stir well. Cover it with a lid and cook till 15 min. Stir occasionally. Insert a knife into one of the pieces and check if it is done. If not then cook it for 3 more min. Add 1 cup water if you need more curry.
  • It is ready to eat after previous step is done however I like to dry the remaining water in the chicken if there is any before adding water and let it fry on medium flame like we fry masala for our curries. Then add a cup of water to have some curry
  • Serve hot with chapati or rice after garnishing with chopped green coriander

Notes

  • In step 3 stir chicken lightly as it cooks fast and flesh tends to lose bones.
  • You can make this in very less oil if you don’t bother to fry onions in step 2 however if onions are not fried properly it will add little sweetness to the dish.
