Ingredients
  

  • 500 gm luffa jal turai
  • 7-8 tender pumpkin leaves
  • 3-4 green chillies
  • 3-4 garlic cloves
  • 1 tablespoon ground nuts
  • 1 tablespoon couscous
  • 1/4 cup sprouted moong dal
  • 1-2 to mato
  • Chopped fresh coriander leaves
  • 1 teaspoon Turmeric Powder
  • 2 tablespoon mustard oil
  • 10 gm fried moong badi

Instructions
 

  • Peal off luffa (jal turai) then cut into 1to 2 inches long.

  • Wash the tender pumpkin leaves then steam for a few minutes.

  • Take a mixture grinder put steamed pumpkin leaves, sprouted moong, green chillies, garlic, peanuts, tomato, coriander leaves and couscous. Make a paste.

  • Now heat a wok put oil, luffa pieces, turmeric powder and salt. Stir then cover for cooking. After cooking add the leaves paste stir continuously until dry.

  • Then serve in a platter and garnish with moong dal badi. This recipe can be served with rice, chapati, paratha etc.
