Recipe Notes
Additional Tips
- For an extra-crispy texture, add a small handful of semolina (sooji) to the rice flour batter before frying—the coarse grains create a delightful crunch.
- If you want to make these boras ahead of time, fry them until they're just golden, let them cool, and store in an airtight container; re-crisp them in a hot oven or air fryer for a few minutes before serving.
- For a milder version, deseed the green chillies or substitute with finely chopped bell peppers, which add color and a gentle sweetness without the heat.
- Try shaping the boras into small discs or flattening them slightly before frying to ensure they cook evenly and absorb less oil, resulting in a lighter snack.
