A one pot dish to make your dinner festive. Try this grilled tomato chicken with some Italian seasoning and feel like being to Italy. It is healthy and delicious too.

Ingredients
- Chicken 250 g
- Ripe Tomatoes 6 diced
- Onion 1/2 chopped
- Garlic 4 pods sliced
- Ginger garlic paste 1 tsp
- Salt 1 tsp
- Pepper powder 1 tsp
- Olive oil 1 tbsp
- Dried Oregano 1 tsp
- Dried Rosemary 1 tsp
- Corainder leaves 2 tbsp chopped
- Red chili flakes 1 tsp
- Mozarella cheese 1 inch cube
- Amul cheese cubes 3

Instructions
- Marinate the chicken pieces with salt, pepper and ginger garlic paste. Let it rest for at least half an hour.
- In the meanwhile, prepare the tomato bedding.
- For this, in a bowl, mix together the diced tomatoes, onion and garlic.
- To this, add salt, pepper, chili flakes, oregano, dried rosemary, and coriander leaves.
- Mix well.
- Now grease a baking dish with olive oil. Use a dish that is grill-safe. I have used a ceramic dish without any silver/golden lining.
- Transfer the tomato mixture to the baking dish.
- Spread it throughout the base of the dish evenly.
- Now place the marinated chicken pieces on top of the tomato bedding, securing them in small shallow wells.
- Grill the dish for 20 minutes.
- Then turn the chicken pieces and grill for another 20 minutes, until chicken is cooked perfectly.
- Just 1 minute before the bake time, add in the cheese on top to melt.
- Serve hot with crispy croutons or risotto.
