A one pot dish to make your dinner festive. Try this grilled tomato chicken with some Italian seasoning and feel like being to Italy. It is healthy and delicious too.

Chicken 250 g
Ripe Tomatoes 6 (diced)
Onion 1/2 (chopped)
Garlic 4 pods (sliced)
Ginger garlic paste 1 tsp
Salt 1 tsp
Pepper powder 1 tsp
Olive oil 1 tbsp
Dried Oregano 1 tsp
Dried Rosemary 1 tsp
Corainder leaves 2 tbsp (chopped)
Red chili flakes 1 tsp
Mozarella cheese 1 inch cube
Amul cheese cubes 3
Marinate the chicken pieces with salt, pepper and ginger garlic paste. Let it rest for at least half an hour.
In the meanwhile, prepare the tomato bedding.
For this, in a bowl, mix together the diced tomatoes, onion and garlic.
To this, add salt, pepper, chili flakes, oregano, dried rosemary, and coriander leaves.
Now grease a baking dish with olive oil. Use a dish that is grill-safe. I have used a ceramic dish without any silver/golden lining.
Transfer the tomato mixture to the baking dish.
Spread it throughout the base of the dish evenly.
Now place the marinated chicken pieces on top of the tomato bedding, securing them in small shallow wells.
Grill the dish for 20 minutes.
Then turn the chicken pieces and grill for another 20 minutes, until chicken is cooked perfectly.
Just 1 minute before the bake time, add in the cheese on top to melt.
Serve hot with crispy croutons or risotto.
