Energy Ladoos: A Family Special!

This was my go-to source of energy when growing up! The original family recipie included Jaggery, Rice and Ragi, but I have come to change it so that it is modern, yet traditional. What is not to love about healthy ladoos made out of Almonds, Cashews, Cocoa and Chocolate Chips?!

Ingredients
  

  • Peanuts: 1 cup
  • Sesame seeds: 1/2 cup
  • Fried gram: 1 cup
  • Almonds: 1 cup
  • Cashew nuts: 1 cup
  • Raisins: 1/2 cup
  • Dates: 30-40
  • Melon seeds: 2 table spoons
  • Sunflower seeds: 2 table spoons
  • Chocolate chips: 1 cup
  • Cocoa powder: 2 table spoons

Instructions
 

  • Soak the dates and raisins in warm water, and later grind them into a paste using a blender or mixer.
  • Roast the rest of the ingredients in an oven or stovetop on low heat until well toasted and a nice aroma wafts across.
  • Once done, they can either be chopped into bits or use a mixer/blender if you’d like it to be finer.
  • In a big mixing bowl, take out the dates and raisin paste. Add cocoa powder and mix well.
  • Add 1 tablespoon vanilla extract, mix well and then add the rest of the ingredients including choco chips.
  • Pour this onto a baking tray lined with parchment paper, with a little overhang so as to easily remove it from tray.
  • Flatten well with a spatula or your palm greased with ghee. Make sure to press well or they might break when cutting them.
  • Bake for 12-15 mins @ 150 degrees Celsius. Now remove the tray and cool it before refrigerating for an hour or so.
  • Cut into squares or logs and dig in for the perfect snap to tackle hunger pangs!
