Ingredients
- ¾ cup + 2 tbsps whole wheat flour
- ¼ cup + 1 tsp caster sugar
- ¼ cup honey
- ¼ cup oil
- ¼ cup milk
- ¼ tsp baking soda
- 1 teaspoon baking powder
- A pinch of salt
- ¼ tsp grated lemon rind
- ½ tsp dry ginger powder
- ½ tsp dry basil leaves
- 1 tbsp concentrated lemon juice taken from 1 big lemon
- ¼ cup water

Instructions
- Sieve flour, ginger powder, baking soda, baking powder and salt together for at least 2 ââ¬â 3 times.
- Mix basil and lemon rind.
- Grease a baking tray and preheat the oven @180
- Combine 1 tbsp lemon juice with ¼ cup water and filter this lemon juice. Set aside.
- Take milk in a bowl and dissolve sugar. Add honey and oil. Mix well.
- Pour this wet mixture to the dry mixture. Mix until no lumps are seen and add the diluted lemon juice.
- Mix gently. You will see it quite frothing. Donââ¬â¢t overmix the cake batter.
- Pour the cake batter into the greased tin and bake @180c for 30 - 35 minutes.
- Allow it to cool completely and serve with honey drizzled on it or as it is.
Notes
Once the lemon juice is added, do not mix the cake batter for a long time.
