Lucknawi Galawati Kebab

The Galouti Kebab or Galawati Kebab is one of the many famous street food of Lucknow, the city of nawabs. It is made of minced mutton and is a star Awadhi dish. A raw papaya paste is traditionally used to tenderise the meat. Lucknowi folklore has it that Galawati Kebab was created for an aging, toothless Nawab Wajid Ali Shah. Galawati means 'melt in your mouth' and was perfect for the old ruler.

Ingredients
  

  • 2 tbsp raw papaya paste
  • 1 tbsp Ginger garlic paste
  • 450 gm mutton mince
  • Salt
  • 1 tbsp khoya
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1 tbsp rose water or 10 rose petals
  • 1 tbsp red chilli powder
  • 1.5 cup onions chopped
  • 4 tbsp ghee
  • 4-5 tbsp besan

Instructions
 

  • In a big bowl add mutton mince, salt and papaya paste. Mix well.
  • Cover and keep in refrigerator for atleast 2 hours.
  • Make a smooth paste of chopped onions.
  • In a pan , heat ghee and saute khoya in it on low flame till it turns brown.
  • Add the ground cinnamon, cloves and cardamom and saute for a minute.
  • After two hours take the mutton mince out and add onion paste, ginger garlic paste. Mix well.
  • Add sauteed khoya and ground masalas mixture.mix well.
  • Add rose water, chilli powder and mix well.
  • Blend this mixture in a blender till everything is well incorporated. (Couple of minutes)
  • Now add besan flour such that it forms a very soft dough.
  • Cover and refrigerate for one more hour.
  • After one hour, heat a generous amount of oil in a flat pan.
  • Make patty shaped kebabs of the marinated mutton mince and fry them well from both the sides on medium low flame.
  • Serve hot with mint chutney, onion rings, lemon wedges and enjoy !
