Ingredients
  

  • 1 Eggplant diced (Optional)
  • 1 Red bell pepper diced
  • 1 Yellow bell pepper diced
  • 1 Green capsicum diced
  • 2 cup Broccoli florets
  • 2 Zucchini yellow, green, diced
  • 1 Carrot diced
  • ½ cup Baby corn diced
  • ½ cup Mushrooms halved
  • ½ cup Red onion diced
  • ¾ cup Tofu or cottage cheese, cubed

For the marination

  • 1 tablespoon Extra Virgin Olive oil
  • 1 ½ tablespoon BBQ sauce
  • 2 tablespoon Balsamic vinegar
  • ½ tablespoon Soya sauce
  • 1/2 teaspoon Black Stone flower lightly broiled
  • 1 teaspoon Dried herbs Italian dried herb blend
  • ½ teaspoon Black pepper
  • Salt to taste
  • Sugar or honey - to taste

For basting/ brushing the vegetables and grills

  • ½ tablespoon Olive oil extra virgin
  • 1/4 teaspoon Black Stone flower lightly broiled.

For the garnishing

  • 1/4 bunch Parsley chopped, small

Instructions
 

  • Toss vegetables in olive oil, BBQ sauce, balsamic, soya sauce, Italian dried herb, broiled black stone flower, Black pepper, spices & sugar/ honey.
  • Seal with a cling wrap and refrigerate for 01-1 ½ hour.
  • Heat the Oil & infuse the Black stone flower in it, strain and use it for brushing / spraying on the grill.
  • Brush or spray grill with olive oil in which the broiled black stone flower is infused
  • Place vegetables directly on grill in a grilling basket or on skewers on medium/high heat.
  • Flip after 05 minutes each side, or until desired doneness.

For the serving

  • Serve hot garnished with chopped parsley.

Notes

  • You may use more vegetables as desired, for e.g. Cherry tomatoes.
  • Increase the marination time, if required.
  • You may blanch the broccoli and carrots refresh n then marinate them.
  • You may add minced garlic in the marination to further enhance its flavor.
