Green beans is a healthy veggie which can be served in different ways. Today I have made a simple recipe using them which can be used as an accompaniment to roti or rice. The combination of green beans with fresh coconut gives an authentic taste of South Indian cuisine.

Ingredients
  

  • Green beans - 1 cup cut finely
  • Red chillies - 2
  • Mustard seeds - 1 tsp
  • Urad dal - 1/2 tsp
  • Curry leaves - 1 sprig
  • Sugar - 1/2 tsp
  • Grated fresh coconut - 2 tbsp
  • Oil - 2 tsp
  • Salt

Instructions
 

  • Heat oil in a kadai and mustard seeds, curry leaves and red chillies.
  • Once they splutter, add urad dal and let it brown.
  • Now add the chopped green beans and mix. Add salt and water and let cook for 10-15 minutes. Add water as required and cook till beans are soft and slightly crunchy.
  • Once the beans are cooked, add the fresh grated coconut and sugar and cook for 2 more minutes. Turn off the stove and serve garnished with coriander.
