About Sandwich Custard Pancakes...
Pancakes—who doesn’t love them? These aren’t your ordinary flapjacks; they’re made with a delightful twist of vanilla custard powder, adding a creamy richness to every bite. Plus, instead of the usual griddle, I’ve used a sandwich toaster, making them perfectly shaped and utterly unique.
This innovative recipe not only looks gorgeous but is also a healthier choice thanks to the natural sweetness of honey. These cute little pancake sandwiches are ideal for breakfast, brunch, or a satisfying snack. Give them a try—I’m certain you’ll never regret this delicious decision!

Additional Tips
- For a fun flavor twist, add a pinch of cardamom or a few drops of almond extract to the batter along with the vanilla custard powder for a more aromatic profile.
- If you’d like a gooey center, try placing a small square of chocolate or a spoonful of fruit jam between two spoonfuls of batter before closing the sandwich toaster—it’ll melt inside for a surprise filling.
- To make these pancakes ahead, allow them to cool completely, then store in an airtight container in the fridge for up to 2 days; gently reheat in the sandwich toaster or oven for a fresh, crisp exterior.
- For a dairy-free version, substitute the milk with almond or oat milk and use a plant-based butter; make sure your custard powder is dairy-free as well.
