Thoran is a side dish from the Kerala Cuisine made with vegetables like beetroot, cabbage, beans, carrot etc. It is a coconut based side dish. Beetroot thoran is a popular dish which is an integral part of Onam sadhya and also had as a side dish in daily meals in keralite homes. It is quick and easy recipe prepared with basic ingredients and beetroot and coconut as the main ingredients.

Ingredients
- Beetroot 250 gms finely chopped
- Coconut ½ cup
- Cumin seeds 1 tsp
- Dry Red Chilly 3
- Shallots 4
- Garlic 3 cloves
- Coconut oil 2 tbsp
- Mustard seeds ½ tsp
- Urad dal ½ tsp
- Curry leaves 1 sprig
- Salt

Instructions
- Take the chopped beetroot in a grinder cup and run the grinder for few seconds. Remove and set aside
- Take the coconut, cumin seeds, dry red chillies, shallots and garlic and grind it finely.
- Heat 1 tbsp oil in a pan. Add the mustard seeds, urad dal and curry leaves. Let it crackle.
- Add the beetroot, salt, mix well and saute for around 10 mins stirring continuously
- If your beetroot is very dry sprinkle some water and cook. Let the water evaporate completely.
- Add the remaining 1 tbsp oil and fry for about 5 mins stirring continuously and take off the heat.
