  • Blanch the chopped spinach in boiling water for 1 minute. This helps retain its vibrant green color. Immediately plunge the spinach into ice water to stop the cooking process. This step also helps maintain its texture. Once cooled, drain well and blend into a smooth paste. Set aside.

  • Combine the tomato paste and ginger-garlic paste in a small bowl. Mix well and set aside.

  • Heat the mustard oil in a pan or skillet over medium heat. Add the cumin seeds and sesame seeds. Sauté for about 30 seconds until fragrant. This blooming of spices enhances their flavor.

  • Add the tomato-ginger-garlic paste to the pan. Sauté for 1-2 minutes until the raw smell disappears.

  • Sprinkle a little water over the vegetables, cover the pan, and cook for 5-7 minutes, or until the potatoes and broccoli are tender-crisp.
