Palak Paneer Kathi Roll Recipe (High Protein Spinach Cottage Cheese Wraps Recipe) is a variation from the authentic Kathi roll. The Indian bread is flavored with palak which gives it an exotic look for the dish. It is then stuffed with the paneer.
The palak paratha gives it a different texture to the whole wrap. It provides a soft and tasty bread. It is also a great nutrition for Iron and Protein. Serve the Palak Paneer Bhurji Roll for a wholesome breakfast along with a bowl of fruits or a fresh fruit juice for breakfast.

Ingredients
  

For the palak paratha

  • 1 cup whole wheat flour
  • 1 cup spinach leaves palak pureed
  • 2 green chili small, chopped
  • 1/2 teaspoon cumin powder
  • 1/ 4 teaspoon Salt
  • 2 tbsp Oil for kneading

For the paneer burji stuffing

  • 150 gm paneer
  • 2 green chili chopped
  • 1 onion finely sliced
  • 3 garlic chopped
  • 1 tomato finely chopped
  • 1 /2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon turmeric powder
  • 2 tablespoon coriender leaves chopped
  • 1/2 teaspoon Coriander powder
  • 1/4 teaspoon Salt

Sauce

  • 4 tbsp tomato pasta sauce
  • 1 tablespoon mustard sauce

Instructions
 

  • Puree the spinach along with the green chilli and keep it aside.
  • In a mixing bowl, add the wheat flour, palak puree, cumin powder, salt and knead to make a smooth dough, adding any additional water if required.
  • Finally, add a teaspoon of oil and knead well to make a soft palak paratha dough. Divide the paratha dough into 4 portions.
  • Heat a skillet over medium heat to make the palak parantha, dust the dough with flour and roll to make a large circle.
  • Cook the paratha on the heated skillet. Drizzle ghee or oil over the palak paratha and cook on both sides until cooked through. You will see light brown spots on both sides. Cook aIi the paratha.
  • The next step is to make the Paneer Bhurji. To make the Paneer Burjhi, mix all the ingredients in a large mixing bowl. Check the salt and spices and adjust to suit your taste.
  • To make the wrap, add a tablespoon of the sauce on each paratha and spread well.Spoon the paneer Burj mixture into the paratha. Roll to form a wrap and serve
  • Serve the Palak Paneer Kathi Roll for a wholesome breakfast.
