A bowl of Hot Soup on a Rainy evening feels like heaven. This vg clear soup is very filling and healthy. And it is very very easy to make with almost no preparation

Ingredients
  

  • 1 capsicum
  • 1 small carrot
  • 5-6 green French beans
  • 4-5 mushrooms
  • ¼ cup corn kernels
  • 1 teaspoon garlic paste
  • ½ tsp ginger paste
  • 1 medium onion fine chopped
  • 3 cup water
  • 1 teaspoon olive oil
  • Salt
  • Fresh Crushed black pepper to taste
  • 1 tbsp vinegar
  • 1 tbsp fine chopped coriander

Instructions
 

  • Pulse the beans, capsicum and carrot in food processor for a few seconds, it my way of quick fine chopping
  • Chop the mushrooms roughly and keep aside
  • Heat oil in a pan and add ginger and garlic paste, sweat them for few seconds and then add onions, cook them till they are pink
  • Now add mushrooms and cook for 2 minutes, then add the processed capsicum, beans and carrot
  • Sauté the vegetables for 4-5 minutes and then add water and let it boil for 5 minutes and lastly add salt and pepper and vinegar and mix well lastly also add some fine chopped coriander
  • Serve it hot and enjoy your bowl of health
