A bowl of Hot Soup on a Rainy evening feels like heaven. This vg clear soup is very filling and healthy. And it is very very easy to make with almost no preparation

Ingredients
- 1 capsicum
- 1 small carrot
- 5-6 green French beans
- 4-5 mushrooms
- ¼ cup corn kernels
- 1 teaspoon garlic paste
- ½ tsp ginger paste
- 1 medium onion fine chopped
- 3 cup water
- 1 teaspoon olive oil
- Salt
- Fresh Crushed black pepper to taste
- 1 tbsp vinegar
- 1 tbsp fine chopped coriander

Instructions
- Pulse the beans, capsicum and carrot in food processor for a few seconds, it my way of quick fine chopping
- Chop the mushrooms roughly and keep aside
- Heat oil in a pan and add ginger and garlic paste, sweat them for few seconds and then add onions, cook them till they are pink
- Now add mushrooms and cook for 2 minutes, then add the processed capsicum, beans and carrot
- Sauté the vegetables for 4-5 minutes and then add water and let it boil for 5 minutes and lastly add salt and pepper and vinegar and mix well lastly also add some fine chopped coriander
- Serve it hot and enjoy your bowl of health
