Ingredients
- 2 Potato (medium size)
- 1 tbsp Brown Sugar (and)
- 1 tbsp Water
- 2 tbsp Soy Sauce
- 1 tbsp Sesame Seeds
- 1 tbsp Oil

Instructions
- Chop the potatoes in about 1 inch length and 1 cm thick.
- Heat 1 tbsp oil in a pan
- Saute the chopped potatoes for a couple of min on medium heat or until they are light golden.
- Add brown sugar.
- Add soy sauce.
- Cover and let the potatoes cook on lowest flame.
- Check in about 10 min. The sauce would have thicken by now and potatoes should be cooked. If not add 1 tbsp water and cook for a couple of minutes.
- Add half tbsp sesame seeds and cover for a min. Switch off the heat.
- Garnish with remaining sesame seeds and enjoy.
Recipe Notes
I had dark soy sauce so used only 2 tbsp, normal soy sauce can be used 1 or 2 tbsp more as per taste.
Additional Tips
- For extra crunch, parboil the potatoes first, let them cool, and then pan-fry until crisp before adding the teriyaki sauce—this helps them hold their shape and absorb the glaze better.
- To introduce a spicy kick, add a pinch of chili flakes or a drizzle of sriracha to the teriyaki sauce as it simmers.
- If you prefer a vegan and gluten-free version, ensure you use tamari or a certified gluten-free soy sauce instead of regular soy sauce.
- Garnish with finely sliced spring onions and a sprinkle of toasted sesame seeds just before serving for a fresh, aromatic finish and appealing presentation.
