I usually prefer salads for dinner as it is light and full of nutrition. But salads are normally served chilled or at room temperature. In winters to eat something chilled is not ok rather its like having a kind of punishment, at least for me. I remember in my childhood I used to wait for winters so that I can get roasted potatoes or sweet potatoes to eat. This salad is inspired by my childhood memories. I grilled baby potatoes with dill leaves which is full of nice aroma, coated with olive oil, garlic and mixed herbs, served with salad leaves, cucumber, onions and tomatoes which are full of fibres. Toss with lemon juice, lemon zest and honey and garnish with cottage cheese.... a complete meal ...
