Ingredients
 

  • 70 gm unsalted butter room temperature
  • ½ cup multigrain flour + 1/8 cup more
  • ¼ cup all purpose flour
  • 2 tbsp corn flour
  • 1/3 cup coconut sugar powdered
  • ¼ cup sweet potato mashed
  • ½ teaspoon vanilla extract
  • 1 pinch Salt
  • 1/8 teaspoon baking soda
  • 1/3 cup milk or dark chocolate chips
  • 1/2 cup Dark chocolate melted, for decoration - optional

Instructions
 

  • Pressure cook a medium size sweet potato, cool it completely and mash the potato after peeling the skin.
  • Sieve the flour, corn flour, baking soda and salt, set aside in a bowl.
  • In a bowl, beat butter and coconut sugar together until it turns light and fluffy.
  • Mix mashed sweet potato and vanilla extract.
  • Combine the sifted flour mixture until it comes together like a ball. Do not knead like a chapathi dough.
  • Mix the chocolate chips.
  • Refrigerate the cookie dough for 15 - 30 minutes.
  • Preheat the oven @160c.
  • Make small balls out of the cookie dough, gently flatten them and place on the tray aligned with parchment sheet.
  • Bake for 10-15 minutes or until the bottom turns slightly brown.
  • Cool them on the rack and decorate with melted chocolate before serving.

Recipe Notes

  • Oven temperature and timings vary from one to another. Hence bake according to your oven.
  • Sugar can either be decreased or increased based on the sweetness of the sweet potato.
