Call this fusion meal an Indo – Italian meal or simply a fusion meal, it is just awesome with the goodness of sweet corn and wheat dalia. Indian wheat dalia is given an Italian makeover in this meal. It is definitely a treat for pizza lovers and kids for sure. No baking or kneading, you can just replicate the similar aroma and taste using our healthy whole wheat dalia.
1 cup whole wheat dalia (Broken wheat)
4 to 4 ½ cups Water (adjust according to the quality of dalia)
3 tomatoes, medium sized
2 cups water for cooking tomatoes
½ tablespoon garlic, thinly sliced
1 to 2 green chilli(es), chopped or slit
½ teaspoon red chilli powder
1 ½ teaspoon pizza seasoning
¾ teaspoon red chilli flakes
1 tablespoon tomato sauce
½ cup sweet corn
¼ cup onion, thinly sliced
¼ cup tomato, thinly sliced
¼ cup capsicum, thinly sliced
¼ cup to ½ cup mozzarella cheese, grated
Salt as required
3 tablespoon olive oil
Boil water, add tomatoes and cook until the skin starts to split.
Remove the cooked tomatoes from the pot.
Allow the tomatoes to cool down completely, remove the skin and blend to a puree without adding water.
Heat 1 tablespoon of olive oil in a deep pan / kadai and roast the dalia until you get a nice aroma and color changes slightly.
Transfer the roasted dalia into a bowl.
In the same pan, add remaining olive oil and once the oil is hot enough, add chopped garlic.
Sauté for few seconds; add green chilli followed by tomato puree.
Once the puree starts boiling mix sweet corn.
Add red chilli powder and salt followed by water.
Bring it to one boil, lower the flame and mix the roasted dalia.
Close the lid of the pan.
When the dalia is half cooked, add tomato sauce, red chilli flakes, pizza seasoning and mix.
Check for salt and spices and adjust at this stage if required.
Close the lid and allow the dalia to cook until it is 3/4th done.
By now most of the water would have been absorbed. Turn off the flame.
Open the lid of the pan / kadai, spread the onion slices followed by tomato and capsicum slices.
Spread the cheese.
Dum Cooking on low flame: a) Heat a dosa griddle / tawa, simmer the flame and place the pan / kadai on the hot dosa griddle. b) Close the lid and place some weight or a cup filled with water on the lid so that the steam does not escape.
Allow it to cook for about 10 to 15 minutes.
Turn off the stove.
Sprinkle extra pizza seasoning if required and serve immediately.
- Cooking time of the dalia may vary depending upon the variety and size. I used 24 mantra whole wheat dalia and have indicated the timings according to this brand of dalia.
- Adjust spices according to your taste.
- 1 cup measurement I used is 200 ml measuring cup
- Be careful when using water as one variety of wheat dalia may absorb more water and another may absorb less.
