Roasted Pepper Pasta

Pastas are all time favourite food, but it is a bit high on calories which is not good for health. So this one is a very light and simple pasta-dish with a delicious smoky flavour of bell peppers and fresh herbs .....

Ingredients
- 1 Red pepper
- 1 Yellow pepper
- 2 Onions thinly sliced
- 2 Cup Pasta
- 1 tbsp crushed garlic
- 2 tbsp finely chopped fresh parsley
- 2 tbsp chopped spring onion greens
- Salt
- Crushed black pepper according to taste
- 1 Teaspoon oregano seasoning
- 2 tbsp Olive Oil
- For garnishing parmesan cheese

Instructions
- In a large pan add water, salt and few drops of olive oil and boil it. Now add Pasta to the boiling water and cook until the pasta is tender
- Apply little bit of olive oil on bell peppers and grill it in a oven or toast it on gas until they are black and blistered from all sides
- Once dome remove it from heat and leave it for 5 minutes. Now peel the peppers and cut them into quarters, remove the seeds and slice it into thin strips
- Heat olive oil in a pan, add onions and cook over medium flame they are translucent. Stir occasionally and do not let the onions become brown
- Now add crushed garlic and cook it for a minute or two.
- Now add peppers to this, mix gently, add 2 Tablespoon of water in which we cooked pasta. Add salt, black pepper, chopped parsley, spring onion greens and oregano seasoning
- Add cooked pasta to this cook it for 3 to 4 minutes.
- Served it hot, if you like cheese add parmesan before serving .....
