Yield / Serves
1 Red pepper
1 Yellow pepper
2 Onions thinly sliced
2 Cup Pasta
1 Tablespoon crushed garlic
2 Tablespoon finely chopped fresh parsley
2 Tablespoon chopped spring onion greens
Salt according to taste
Crushed black pepper according to taste
1 Teaspoon oregano seasoning
2 Tablespoon Olive Oil
For garnishing parmesan cheese
In a large pan add water, salt and few drops of olive oil and boil it. Now add Pasta to the boiling water and cook until the pasta is tender
Apply little bit of olive oil on bell peppers and grill it in a oven or toast it on gas until they are black and blistered from all sides
Once dome remove it from heat and leave it for 5 minutes. Now peel the peppers and cut them into quarters, remove the seeds and slice it into thin strips
Heat olive oil in a pan, add onions and cook over medium flame they are translucent. Stir occasionally and do not let the onions become brown
Now add crushed garlic and cook it for a minute or two.
Now add peppers to this, mix gently, add 2 Tablespoon of water in which we cooked pasta. Add salt, black pepper, chopped parsley, spring onion greens and oregano seasoning
Add cooked pasta to this cook it for 3 to 4 minutes.
Served it hot, if you like cheese add parmesan before serving .....
