Ingredients
- Brinjal- 2medium
- Onion- 1small
- Garlic- 3cloves
- Parsley- 1/4cup
- Parmesan cheese- 1/4cup
- Salt and pepper to taste
- Oil for deep frying
- Bread crumbs- 1cup

Instructions
- Clean the eggplants and make slit in it keeping the head intact
- Check the eggplants
- On the gas top roast the eggplant up to soft
- Then keep the eggplant in a bowl and cover it with a little. It will help you to peel the skin easily.
- In a blender jar add pulp of roasted eggplant, onion, garlic, parsley, salt and pepper and half of the bread crumbs and pulse it 2 to3 times.
- Keep thisixture in fridge for 1 hour
- Heat oil for deep frying
- Bring out the mixture from fridge and shape them in log shape and keep aside
- Spread rest of the bread crumbs on a plate. Roll the eggplant logs on that bread crumbs and deep fry in oil up to crispy.
- Serve these with yoghurt dip
