  • Brinjal- 2medium
  • Onion- 1small
  • Garlic- 3cloves
  • Parsley- 1/4cup
  • Parmesan cheese- 1/4cup
  • Salt and pepper to taste
  • Oil for deep frying
  • Bread crumbs- 1cup


  • Clean the eggplants and make slit in it keeping the head intact
  • Check the eggplants
  • On the gas top roast the eggplant up to soft
  • Then keep the eggplant in a bowl and cover it with a little. It will help you to peel the skin easily.
  • In a blender jar add pulp of roasted eggplant, onion, garlic, parsley, salt and pepper and half of the bread crumbs and pulse it 2 to3 times.
  • Keep thisixture in fridge for 1 hour
  • Heat oil for deep frying
  • Bring out the mixture from fridge and shape them in log shape and keep aside
  • Spread rest of the bread crumbs on a plate. Roll the eggplant logs on that bread crumbs and deep fry in oil up to crispy.
  • Serve these with yoghurt dip
