Parmesan cheese- 1/4cup
Salt and pepper to taste
Oil for deep frying
Bread crumbs- 1cup
Clean the eggplants and make slit in it keeping the head intact
Check the eggplants
On the gas top roast the eggplant up to soft
Then keep the eggplant in a bowl and cover it with a little. It will help you to peel the skin easily.
In a blender jar add pulp of roasted eggplant, onion, garlic, parsley, salt and pepper and half of the bread crumbs and pulse it 2 to3 times.
Keep thisixture in fridge for 1 hour
Heat oil for deep frying
Bring out the mixture from fridge and shape them in log shape and keep aside
Spread rest of the bread crumbs on a plate. Roll the eggplant logs on that bread crumbs and deep fry in oil up to crispy.
Serve these with yoghurt dip
