Pizzas with Indian flavor is a must try than regular American versions. Imagine eating paneer tikka masala with naan and pizza is nothing but brick oven baked naan. Since paneer tikka is so popular with everyone, I thought to make this amazing combination of paneer tikka in its masala as a base sauce over no-yeast pizza base and grilled paneer along with other vegetables as topping along with a healthy dose of melting cheeses. Do not be discouraged with long list of ingredients. Pre-planning of this pizza is recommended.

  • For making dough--- Sift flour, baking powder, baking soda, and salt in a large bowl. Repeat sifting once more. Combine milk, yogurt and sugar and whisk.
  • Make a well in the center of flour and add the milk mixture. Combine the flour with milk and knead to form soft dough. Apply oil and knead well for at least 5 minutes for soft pliable dough. Cover with cling film and rest it for 2 hours at RT.
  • For making Paneer Tikka Marinade--- Cut all the veggies in similar size to paneer. Heat the oil and ghee in pan till smoking and add ajwain and besan. Roast for few minutes till aromatic. Cool slightly.
  • Combine and whisk all the marinade ingredients together in a bowl along with roasted besan and add paneer and veggies to it. Thoroughly coat them with the marinade and cover the bowl. Refrigerate overnight or at least 4 hours.
  • Soak wooden skewers in water for 20 minutes (or oil the metallic skewers). Arrange paneer on skewer followed by onion, capsicum, and again paneer. Repeat in the same fashion if skewer is long and grill pan is large enough to accommodate.
  • Heat nonstick grill pan/skillet. Rub surface with tissue dipped in oil. Once heated, place skewers on pan and grill till lightly browned on medium low flame.
  • Keep a careful watch on paneer. Keep flipping so all sides are cooked. Baste with oil if it starts sticking to pan or dries up.
  • For the Tikka Masala Gravy--- Heat oil in nonstick pan. Add cinnamon, black cardamoms, cloves, and kalonji. Add ginger-garlic paste mixed with little water to prevent sticking to pan.
  • Add green chilies and sautรƒยฉ for a minute. Now add the pizza sauce along with tomato paste. Add red chili powder, cumin powder, garam masala powder, kasoori methi powder, and give it a good stir. Cover and cook on low heat till oil separates.
  • Finally add in the cream and cook further for 2-3 minutes. Add chopped coriander leaves (optional) and dried oregano. Sauce is ready.
  • To Assemble Pizza--- Preheat heat oven to 400 Deg F/180 Deg C. Lightly dust surface with flour for easy rolling of dough. Sprinkle flour on dough and roll it out in any desired shape.
  • Transfer dough to a baking tray lined with oven proof parchment paper. Stretch dough with palms to make it bigger. Pierce surface with fork all over the dough. Bake in oven for few minutes till slightly browned. Remove from oven.
  • Apply the tikka masala and spread it out evenly. Sprinkle cheese and arrange grilled paneer tikka chunks along with the grilled veggies.
  • Sprinkle generous amount of cheese and garnish with few cherry tomatoes, onion chunks, and capsicums. Drizzle olive oil over the tomatoes and raw veggies.
  • Bake in oven till cheese melts but doesn't over-brown approximately 10 minutes. Cut in slices and serve with any dipping of your choice.

Recipe Notes

The recipe of dough makes two medium sized (10″) pizza base.
