Palak mushroom shimla aloo ki sabzi is healthy an which recipe from North india. This can be served with chapati, rumal roti or masala dal rice.

Ingredients
- 1 bunch Palak washed & chopped
- 1 large size potatoes cut into small pieces
- 200 gm mushrooms peeled n cut into halves
- 1 large size Capsicums cut into cubes
- 1 onion finely chopped
- 2 medium size tomatoes finely chopped
- 2 green choliya finely chopped
- 5 garlic pods finely chopped
- 1 tsp cumin seeds
- Salt
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala powder
- 1/4 tsp turmeric powder
- 2 cups cooking Oil

Instructions
- Heat oil in deep wok fry potatoes and transfer it in absorbing paper.
- Fry capsicum till it get soft. Transfer it to a plate.
- Fry mushrooms in heated oil when it done. Transfer it to a plate.
- Leave 2 tablespoons oil in wok and splutter cumin seeds Add garlic n cook till it brown.
- Add onion, green chilies n cook till onion get transparent or pink in color.
- Add salt, red chili powder, coriander powder, garam masala powder and turmeric powder. Mix it n add tomatoes cook till oil starts floating on all over masala.
- Add palak mix, cover the lid and cook it on high flame till it remain half.
- Add fried (capsicum, mushrooms and potatoes) and salt, mix it well gently n cook till sabzi get dry.
- Palak mushrooms shimla aloo ki sabzi is ready to serve.
- Serve this sabzi hot with chapati.
Notes
This sabzi is dry for gravy u can add 1/2 cup curd and 1/2 cup fresh cream.
