Ingredients
- For The Adai/Pancake for the adai pancake
- 1 cup Foxtail Millet
- 1 cup Parboiled Rice
- Pulses moong,chawli,matki - 1 cup mixes
- 2 tbsp Udas Dal - 2 Tbsp udas dal
- 1-2 tsp Salt or as per taste
- Filling for the
- 1 Capsicum finely chopped
- 1 Tomato finely chopped
- 1 Onion finely chopped
- 1 Carrot grated
- 2 cubes Processed Cheese
- Coriander finely chopped
- 1-2 tsp Salt or as per taste

Instructions
- Soak the rice, mixed pulses and udad dal in water for 4 hours.
- Grind in a mixer till moderately finely ground.
- Add water as required to make a flowing batter.
- Add salt to taste and keep in a cool place for 2-3 hours.
- Sauté all the veggies in 1 tsp of oil for 3-4 hours. Add salt to taste.
- Add the cheese and turn off the stove. Let the cheese melt and mix well to coat the veggies.
- Heat a flat non stick pan. Pour the batter and make like a dosa.
- After it is cooked on one side, flip and cook on the other side.
- Now put one spoon on the cheesy veggies and cover the adai from both sides.
- Serve hot with coconut or mint chutney. It tastes good even on its own
Recipe Notes
Don’t over ferment the batter.
