Multigrain adai or pancake is a healthy version of the traditional adai which is a staple in Tamil households. The veggies with cheese filling enhances the taste and makes it fresh and healthier.

  • Soak the rice, mixed pulses and udad dal in water for 4 hours.
  • Grind in a mixer till moderately finely ground.
  • Add water as required to make a flowing batter.
  • Add salt to taste and keep in a cool place for 2-3 hours.
  • Sauté all the veggies in 1 tsp of oil for 3-4 hours. Add salt to taste.
  • Add the cheese and turn off the stove. Let the cheese melt and mix well to coat the veggies.
  • Heat a flat non stick pan. Pour the batter and make like a dosa.
  • After it is cooked on one side, flip and cook on the other side.
  • Now put one spoon on the cheesy veggies and cover the adai from both sides.
  • Serve hot with coconut or mint chutney. It tastes good even on its own

Don’t over ferment the batter.
