Multigrain Adai With Cheesy Veg Filling

Multigrain adai or pancake is a healthy version of the traditional adai which is a staple in Tamil households. The veggies with cheese filling enhances the taste and makes it fresh and healthier.

For the adai/pancake
Foxtail millet - 1 cup
Parboiled rice - 1 cup
Mixes pulses
moong,chawli,matki - 1 cup
Udas dal - 2 tbsp
Salt
For the filling
Capsicum - 1 finely chopped
Tomato - 1 finely chopped
Onion - 1 finely chopped
Carrot - 1 grated
Processed cheese- 2 cubes
Coriander finely chopped

Instructions
Soak the rice, mixed pulses and udad dal in water for 4 hours.
Grind in a mixer till moderately finely ground.
Add water as required to make a flowing batter.
Add salt to taste and keep in a cool place for 2-3 hours.
Sauté all the veggies in 1 tsp of oil for 3-4 hours. Add salt to taste.
Add the cheese and turn off the stove. Let the cheese melt and mix well to coat the veggies.
Heat a flat non stick pan. Pour the batter and make like a dosa.
After it is cooked on one side, flip and cook on the other side.
Now put one spoon on the cheesy veggies and cover the adai from both sides.
Serve hot with coconut or mint chutney. It tastes good even on its own

Don’t over ferment the batter.
