  • 4 Malabar Parothas 4 malabar parothas
  • 2 Onions big thinly sliced
  • 2 large Eggs
  • 1 tsp Garlic Paste
  • 1/2 tsp Turmeric Powder
  • 2 Green Chillies
  • 1/2 tsp red chili powder
  • 1 tsp Garam Masala
  • 3 tbsp Coconut Oil
  • 1/4 leaves Coriander chopped
  • 1/2 tsp Black Pepper Powder
  • 3/4 tsp Salt or as per taste
  • 1 Water ladleful


  • Firstly shred / cut the Malabar parothas into thin vertical strips .
  • In a wok , heat coconut oil . Add green chillies , garlic paste and sauté for 1/2 minute. Add the thinly sliced onions and sauté till light brown .
  • Add turmeric powder , chilli powder , garam masala powder , salt . Sauté till a masala is prepared .
  • Now pour eggs to the masala and mix well . When the egg is half cooked , add the black pepper and shredded parota pieces . Give a quick toss .
  • Sprinkle little water at this stage so that kothu doesn’t become dry . A semi dry state where masala coats well is preferred . Every piece has to be masala coated well . Give a quick mix and slow roast for 5 minutes in low heat .
  • Garnish with coriander leaves . Kothu parotha is ready to serve . Serve hot with curd / Salan .
