Malabar kothu parotha is a famous street food of Malabar region , Kerala . This kothu is prepared using world famous Malabar parothas . A finger licking dish that tastes well with Chicken Salan and fresh yogurt . This recipe contains egg.

Ingredients
- Malabar parothas 4
- Onions big 2 thinly sliced .
- Large Eggs 2
- Garlic paste 1 teaspoon
- Turmeric powder 1/2 teaspoon
- Green chillies 2
- Red chilli powder 1/2 teaspoon
- Garam masala 1 teaspoon
- Coconut oil 3 tablespoons
- Coriander leaves chopped 1/4 cup
- Black pepper powder 1/2 teaspoon
- Salt 3/4 teaspoon
- Water 1 ladleful

Instructions
- Firstly shred / cut the Malabar parothas into thin vertical strips .
- In a wok , heat coconut oil . Add green chillies , garlic paste and sauté for 1/2 minute. Add the thinly sliced onions and sauté till light brown .
- Add turmeric powder , chilli powder , garam masala powder , salt . Sauté till a masala is prepared .
- Now pour eggs to the masala and mix well . When the egg is half cooked , add the black pepper and shredded parota pieces . Give a quick toss .
- Sprinkle little water at this stage so that kothu doesn’t become dry . A semi dry state where masala coats well is preferred . Every piece has to be masala coated well . Give a quick mix and slow roast for 5 minutes in low heat .
- Garnish with coriander leaves . Kothu parotha is ready to serve . Serve hot with curd / Salan .
