Malabar kothu parotha is a famous street food of Malabar region , Kerala . This kothu is prepared using world famous Malabar parothas . A finger licking dish that tastes well with Chicken Salan and fresh yogurt . This recipe contains egg.
Malabar parothas 4
Onions big 2 thinly sliced .
Large Eggs 2
Garlic paste 1 teaspoon
Turmeric powder 1/2 teaspoon
Green chillies 2
Red chilli powder 1/2 teaspoon
Garam masala 1 teaspoon
Coconut oil 3 tablespoons
Coriander leaves chopped 1/4 cup
Black pepper powder 1/2 teaspoon
Salt 3/4 teaspoon
Water 1 ladleful
Firstly shred / cut the Malabar parothas into thin vertical strips .
In a wok , heat coconut oil . Add green chillies , garlic paste and sautÃ© for 1/2 minute. Add the thinly sliced onions and sautÃ© till light brown .
Add turmeric powder , chilli powder , garam masala powder , salt . SautÃ© till a masala is prepared .
Now pour eggs to the masala and mix well . When the egg is half cooked , add the black pepper and shredded parota pieces . Give a quick toss .
Sprinkle little water at this stage so that kothu doesnâ€™t become dry . A semi dry state where masala coats well is preferred . Every piece has to be masala coated well . Give a quick mix and slow roast for 5 minutes in low heat .
Garnish with coriander leaves . Kothu parotha is ready to serve . Serve hot with curd / Salan .
