Malabar kothu parotha is a famous street food of Malabar region , Kerala . This kothu is prepared using world famous Malabar parothas . A finger licking dish that tastes well with Chicken Salan and fresh yogurt . This recipe contains egg.
Now pour eggs to the masala and mix well . When the egg is half cooked , add the black pepper and shredded parota pieces . Give a quick toss .
Sprinkle little water at this stage so that kothu doesn’t become dry . A semi dry state where masala coats well is preferred . Every piece has to be masala coated well . Give a quick mix and slow roast for 5 minutes in low heat .
Garnish with coriander leaves . Kothu parotha is ready to serve . Serve hot with curd / Salan .
