Sharing a very easy Karela Chips recipe which can be had as it is or can be paired as side dish with plain Dal-rice or Sambar-rice.
Karela / Pavakkai in Tamil or bitter gourd is believed to have properties to regulate blood sugar levels and also possess other health benefits.
My family loves this as a side dish so I make it at Least once a week.

Ingredients
- 250 gm Bitter Gourd
- 2-3 tsp Oil
- to tsp Salt as per taste make chips, or as per taste
- 2 tsp Salt extra, or as per taste
- 1 tsp Fennel Seeds
- Pinch Turmeric
- 1/2 tsp Dry Mango Powder dry
- 1 tsp red chili powder
- 1 tsp Corriander Powder corriander powder

Instructions
- Wash and thinly slice the bitter gourd. Sprinkle 2 teaspoons salt and mix and let it sit for 10 minutes.
- After 10 minutes squeeze out the liquid from the bitter gourd and wash several times under running tap water.
- Heat oil, add fennel seeds and karela slices and mix.
- Now add all the other spices and salt. Fry stirring occasionally. This will take 10-12 minutes
- We are having Pavakkai or karela chips as side dish with drumsticks sambar and dalia rice.
