Sharing a very easy Karela Chips recipe which can be had as it is or can be paired as side dish with plain Dal-rice or Sambar-rice. Karela / Pavakkai in Tamil or bitter gourd is believed to have properties to regulate blood sugar levels and also possess other health benefits. My family loves this as a side dish so I make it at Least once a week.

Ingredients
  

  • 250 grams bitter gourd
  • 2-3 tsp Oil
  • Salt as per taste to make chips
  • Extra 2 teaspoons salt
  • 1 teaspoon Fennel seeds
  • Pinch of turmeric
  • 1/2 teaspoon dry mango powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon Corriander powder

  • Wash and thinly slice the bitter gourd. Sprinkle 2 teaspoons salt and mix and let it sit for 10 minutes.

  • After 10 minutes squeeze out the liquid from the bitter gourd and wash several times under running tap water.
  • Heat oil, add fennel seeds and karela slices and mix.

  • Now add all the other spices and salt. Fry stirring occasionally. This will take 10-12 minutes
  • We are having Pavakkai or karela chips as side dish with drumsticks sambar and dalia rice.
