About Jackfruit Curry
I like to cook tender jackfruit. Because it is rich source of vitamin, minerals, carbohydrates, fibre, fat and protein. This fruit also contain calories but no cholesterol or saturated fats. It's good for loosing weight.
I purchase whole jackfruit and cut at home. But it is very tough to cut properly. We have to grease the knife or cutter and both hands with mustard oil. After cutting rub with lemon juice then dip in water. So the fruit will remain fresh.

Ingredients
- 250 gm Jackfruit
- 2 tsp Ginger Paste
- 2 tsp Green Chillies or paste paste
- 1/2 cup Tomato Paste
- 1 tsp Cumin Powder
- 1 tsp Corriender Powder corriender powder
- 1 tsp Garam Masala
- 1 tsp Turmeric Powder
- 2 leaves Bay Leaves bay
- 1/4 tsp Cinnamon Powder
- 1/2 cup Coconut Milk
- 1/4 cup Oil
- 1-2 tsp Salt or as per taste

Instructions
- Wash the whole jackfruit. Take 1 tsp oil in a small bowl. Rub the knife with oil and both hands. Then peel off the skin
- After cutting some milky sticky juice come out. Immediately rub with fresh lemon. So the color will not change. Then cut into cubic pieces and dip in water.
- Again wash the fruit pieces then boil. Then strain the water and cook as usual.
- After 10 minutes open the lid add cinnamon powder, garam masala, coconut milk. Now it will ready to serve.
- It can be served lunch or dinner along with chapati or paratha whatever you like. But I am going to eat with simple steam rice.
- Take a frying pan shallow fry the boiled jackfruit pieces keep separate. In the same pan add bay leaves, ginger paste, cumin powder, corriender powder, chilly paste, turmeric powder and salt. Stir continuously and close the lid.
