Jackfruit Seeds Curry
Jackfruit seeds also eatable like jackfruit flesh. It can be roasted, boiled and used in different cuisine. But the jackfruit is seasonal, we can't get whole year. When I get the seeds I try to cook in different ways. As I know it's easier to lose weight and lower risk for heart disease, high blood sugar, high blood pressure, high cholesterol and constipation
- 1 cup jackfruit seeds
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp red chili powder
- 2 tbsp tomato puree
- 1/2 cup coconut milk
- 1 tsp garam masala powder
- 2 tbsp oil
- Boil and remove the skin of the jackfruit seeds.
- Preheat the pan and put oil. Add, turmeric powder, cumin powder, coriander powder, red chili powder tomato puree and seeds. Stir fry sprinkle with little water and close the lid.
- After 5 minutes open the lid add garam masala and salt. Again stir and slow the flame add coconut milk. Off the flame garnish with coriander leaves and ready to serve.
Can be served with rice, chapati, paratha etc.
