Some people use beetroot paste for the colour but it is absolutely not required at all because the meetha looks charming and elegant in it's own natural colour. Come!   • First of all blanch the tomatoes in hot boiling water for 15 minutes. Peel off the skin after it cools down and mash them well. Pass them through a strainer to get rid of the seeds.

  • In a deep non stick wok, make mawa by reducing the milk on high flame. Keep stirring all the while and scraping from the sides until a solid mass is obtained.
  • It doesn't matter if a few seeds remain in. Meanwhile heat butter or ghee in a pan and add the mashed tomatoes, cardamom powder, sugar and the mawa.

  • Keep stirring it well and the flame should be on medium high until the ghee starts leaving the sides of the pan and a nice aroma emanates in the kitchen. It should take about 20 to 25 mins.

  • Beetroot paste can be added at this point to enhance the looks but it is perfectly alright if you cannot lay your hands upon it. I didn't add it too because of it's non availability here at my place.
  • Serve it well garnished with dry fruits of your choice. It tastes awesome when served chilled. However you can serve it warm also.
