Additional Tips

  • For ultra-smooth Khandvi rolls, strain the besan (gram flour) and curd batter through a fine mesh sieve before cooking to prevent any lumps and achieve a delicate texture.
  • To intensify the flavor of your Aam Panna, lightly roast the cumin powder before adding it, and consider muddling the mint leaves with a pinch of salt for maximum aromatic release.
  • If you prefer a vegan version of Aam Panna, substitute thick curd with coconut or almond yogurt; this imparts a subtle nuttiness while keeping the drink creamy.
  • Serve Khandvi rolls garnished with freshly grated coconut and a tempering of mustard seeds and curry leaves for an authentic café-style presentation.
