Canneloni Recipe From Scratch In Marinara Sauce

Tried making Canneloni in a different way. It came out well. Traditionally they are cooked by immersing in hot boiling water and stuffed and baked. But i made canneloni sheets by slightly roasting them like our fulkas and stuffed them and baked them with marinara sauce and added some cheese so my son can enjoy too.

Ingredients
- For the canneloni sheets; 1/2 cup wheat flour
- 1/2 cup semolina
- Some parsley
- Salt
- 1 boiled potato to replace one egg
- For stuffing; 2 cups spinach
- 100 gm cottage cheese
- 50 gm cheddar cheese
- Salt and pepper as per taste
- For Marinara Sauce
- 2 teaspoons Butter or olive oil or any oil
- 4-5 big tomatoes
- 2 onions
- 4-5 cloves of garlic
- Salt and pepper as per taste
- 1/2 cup cheese to sprinkle

Instructions
- Prepare dough by mixing all the ingredients listed for making canneloni. Knead the dough for 5 minutes till it's smooth. Set aside for 30 minutes.
- Roll like chapatis and roast on both sides.
- Or you can also make in traditional way by immersing the rolled sheets in boiling and salted water and removing when the sheets come on top.
- Clean and chop spinach and cook in 1/2 teaspoon oil till all the water dries
- Now add grated cottage cheese and some grated cheese when the mixture cooled. Also add seasoning and mix.
- Stuff spinach mixture in the canneloni sheets and roll them and cut in 3 pieces. Do this with all the sheets.
- Fry chopped onions and garlic till golden brown in butter. Making this sauce in butter gives an amazing taste.
- Add chopped tomatoes and cook till tomatoes are soft.
- Grind to a smooth paste
- In a small spring pan (I used 18 cm pan) spread 1/3 of the sauce on the bottom.
- Arrange all the stuffed Canneloni over the sauce.
- Pour the remaining sauce on top.
- Preheat oven on 180C. Add grated cheese if you li. Bake for 15-20 minutes.
