Ingredients
For the Fenugreek Crepes
- 1 bowl Fenugreek Leaves
- 4 Chili green
- 1/2 tsp Salt or to taste
- 2 tbsp Pea white
- 2 tbsp Gram Flour
- 2 tbsp Rice Flour
- 2 tbsp Semolina
- 1 tbsp Clarified Butter for greasing
- 1/2 cup Water or as needed
Instructions
- Wash the fenugreek leaves thoroughly. Puree them with the green chilies in a food processor or blender until a smooth paste forms.
- In a mixing bowl, combine the gram flour, rice flour, semolina, fenugreek paste, and salt. Gradually add water, mixing until a smooth, semi-thick batter is formed. This batter should be pourable but not too runny.
- Heat water in a steamer. Place banana leaves in the steamer basket and lightly grease them with desi ghee. This prevents the crepes from sticking.
- Pour a thin layer of the batter onto the greased banana leaves. Cover the steamer and steam for 8-10 minutes, or until the crepes are set and cooked through.
- Carefully remove the steamed crepes from the banana leaves.
- Heat the oil in a pan over medium heat. Add the minced garlic and sauté for a few seconds until fragrant. Add the chopped mixed vegetables and salt. Sauté until the vegetables are tender-crisp.
- Stir in the roasted cumin powder and black pepper. This adds depth of flavor to the filling.
- Place a portion of the vegetable filling onto each fenugreek crepe and wrap them tightly. Serve the steamed wraps with a side of vegetable soup. These are especially comforting and healthy during the winter season.
