- 6-8 Pumpkin Flowers
- 6-8 Vegetable Tikki patties, see notes for homemade tikki recipe
For the Batter
- 2 tbsp Gram Flour
- 2 tbsp Rice Flour
- 1/2 tsp Chili Powder
- Salt to taste
For Frying
- Oil for shallow frying
Instructions
- Gently wash the pumpkin flowers and remove the stigma. This delicate inner part can have a bitter taste.
- In a bowl, whisk together the gram flour, rice flour, chili powder, and salt. Gradually add water to form a smooth, thick batter. The batter should coat the back of a spoon.
- Prepare the vegetable tikki (patties). You can use store-bought or make your own. See notes for a simple homemade tikki recipe.
- Carefully fill each pumpkin flower with a small portion of the vegetable tikki. Do not overfill, as this can make it difficult to close the flower and fry evenly.
- Heat a thin layer of oil in a large skillet over medium heat. The oil is ready when a drop of batter sizzles gently.
- Dip each filled pumpkin flower into the batter, ensuring it's fully coated.
