Ingredients
Chicken Marinade
- 300 gm Chicken bone-in, cut into 1-inch pieces
- 1/2 tsp Turmeric Powder
- 2 tsp Chili Powder red
- 1 tbsp Lemon Juice
- 1 tsp Salt to taste
Spice Paste Ingredients
- 1 tsp Peppercorns black
- 1/4 cup Coconut desiccated, unsweetened
- 1 tsp Coriander Seeds
- 1 tsp Cumin Seeds
- 1 inch Ginger piece, roughly chopped
- 5 cloves Garlic roughly chopped
- 1 sprig Curry Leaves
Curry Masala
- 3 tbsp Oil vegetable or coconut oil
- 1/2 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
- 1 tsp Fennel Seeds
- 1 Onion finely chopped, large
- 1 Tomato finely chopped, large
- 1 tsp Coriander Powder
- 1 sprig Curry Leaves
- 3 Chillies coarsely chopped, green
- 1 tsp Salt to taste
- 1/2 cup Water or as needed
Instructions
Marinate the Chicken
- Marinate the chicken with turmeric powder, red chili powder, lemon juice, and salt. Let it marinate for at least 30 minutes.
Roast and Grind Spices
- Heat 1 teaspoon of oil in a pan. Add peppercorns, desiccated coconut, coriander seeds, cumin seeds, ginger, garlic, and curry leaves. Roast for a few minutes until fragrant.
Prepare the Spice Paste
- Allow the roasted spices to cool completely. Grind them into a smooth paste using a blender or mortar and pestle. Add a little water if needed to achieve a smooth consistency.
Sauté Aromatics
- Heat the remaining oil in a pan or pot. Add mustard seeds and let them crackle. Add cumin seeds and fennel seeds, sauté for 1 minute.
Cook Onions and Tomatoes
- Add finely chopped onions and sauté until softened. Add the chopped tomatoes and sauté until mushy. Stir in coriander powder and cook for 2 minutes over low heat.
Combine and Simmer
- Add the ground spice paste to the pan. Mix well and sauté for 2-3 minutes. Add the marinated chicken and salt (if needed), and fry, ensuring the chicken is well coated with the masala.
Cook the Chicken
- Fry the chicken for about 5 minutes over medium heat, stirring frequently. Add water as needed and cook covered for about 15 minutes over medium heat, stirring occasionally until the chicken is cooked through and the sauce has thickened.
Finish and Serve
- Stir in the remaining curry leaves and coarsely chopped green chilies. Cook for another minute or two. Garnish with chopped coriander leaves and serve hot with rice, roti, or dosa.
