Ingredients
 

Vegetables

Spices & Aromatics

  • 1 tsp Ginger paste
  • 1 tsp Garlic paste
  • 1 Chili finely chopped (adjust to taste), green
  • 1/4 cup Coriander chopped, fresh
  • 1.5 tsp Salt or to taste
  • 1/2 tsp Pepper black, ground

Instructions
 

Prepare the Vegetable Filling

  • Heat oil in a pan. Add ginger and garlic paste and sauté for 30 seconds.
  • Add the chopped carrots, beetroot, cabbage, papaya, and mushrooms. Cook until slightly softened, about 5-7 minutes.
  • Stir in the green chili, coriander, salt, and black pepper. Cook for another minute.
  • Set aside to cool.

Make the Batter

  • In a bowl, whisk together rice flour, chickpea flour, salt, and a little water to form a smooth batter. The consistency should be similar to pancake batter. Add more water as needed.

Cook the Wraps

  • Lightly brush a non-stick pan or griddle with oil and heat over medium heat.
  • Transfer the batter to a piping bag or ziplock bag with a corner snipped off.
  • Pipe the batter onto the hot pan in a thin, circular or oval shape, leaving some space between each wrap.
  • Cook for 1-2 minutes per side, or until golden brown and cooked through.

Assemble and Serve

  • Spoon the cooled vegetable filling onto one half of each cooked wrap.
  • Fold the other half over the filling to create a half-moon shape.
  • Serve immediately and enjoy!
