Ingredients
 

Saag Mixture

  • 1/2 cup Spinach a mix of spinach, cooked, greens, mustard greens, or your preferred greens
  • 1/4 tsp Turmeric powder
  • 1 clove Garlic minced
  • 1-2 Chili finely chopped, green
  • 1 Chili red, whole
  • Salt to taste
  • 1 tbsp Oil for cooking saag

  • In a pan, heat oil and sauté minced garlic, green chilies, and whole red chili until fragrant.

  • Add the chopped saag (greens) and turmeric powder. Cook until the saag wilts and softens. Season with salt to taste. Set aside.
  • In a large bowl, combine the gram flour, ragi flour, jowar flour, bajra flour, sattu flour, and corn flour.
  • Add the cooked saag mixture to the dry ingredients. Gradually add water, whisking constantly to form a smooth batter. The batter should be pourable but not too thin.
  • Heat a lightly oiled griddle or tawa over medium heat. Pour a ladleful of batter onto the hot griddle, spreading it into a thin circle.

  • Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to appear on the surface. This ensures a light and crispy chilla.
