Gluten Free Methi Millet Wraps

Methi Millet Wraps include Foxtail millet , gram flour , iron rich fenugreek leaves , nutrients filled mint leaves , zucchini , capsicum , onions and other spices making these wraps highly nutritive and tasty as well . Methi Millet Wraps are totally gluten free . These Methi Millet Wraps are diabetic friendly and diet friendly too .

Ingredients
- Methi leaves 1 bunch
- Foxtail millet flour 1/2 cup
- gm flour 3/4 cup
- Caraway seeds 3/4 teaspoon
- Salt
- Ghee 2 tablespoons
- Mint leaves 1/4 cup
- Turmeric powder 1/4 teaspoon
- For the filling :
- Onion 1medium sized finely chopped
- Tomato 1 big finely chopped
- Salt as preferred
- Zucchini 1 medium sized cut into thin strips
- Green capsicum 1 small julienned
- Ginger garlic paste 1/4 teaspoon
- Chaat masala powder 1/2 teaspoon
- Coriander powder 1/4 teaspoon
- Black pepper powder as preferred
- Ghee 1.5 teaspoon
- Other ingredients :
- Water to knead

Instructions
- In a bowl , take foxtail millet flour , gram flour , salt , caraway seeds , methi and mint leaves , turmeric powder. Mix all together . Start kneading to a smooth dough by adding required water gradually . Smear 2 teaspoons ghee .
- Cover and rest the dough for 20 minutes .
- Meantime , let’s prepare the filling . Heat 1.5 teaspoons ghee in a pan . Sauté ginger garlic paste . Add onions . Sauté till translucent . Sauté tomatoes till soft . Add the other veggies . Sauté till crunchy .
- Add salt , chaat masala powder , coriander powder , black pepper powder . Once the veggies look masala coated . Switch off flame . Add extra spoons of ghee if preferred . Filling is ready .
- Coming to the dough , dough looks soft and moist after 20 minutes .
- Divide the dough into medium sized balls . Spread a butter paper on a plate . Grease your fingers and butter paper with ghee so spreading the dough into rotis becomes easy .
- Spread , flatten the dough with fingers as we do for akki roti .
- Heat a iron griddle to smoking point . Reduce the flame . Gently release the pressed roti from the butter paper and place the methi Millet roti on the hot griddle .
- Flip to another side , when you could see the upper side puffing . Smear ghee on the sides and apply ghee on the roti . Cook until light brown spots are visible on the rotis .
- Place 2 tablespoons of filling on the centre of the roti . Wrap the roti as done for tacos .
- Repeat the steps for the rest ( Methi Millet wraps ) .
- Methi Millet Wraps are ready to serve . Serve hot .
Notes
Be gentle while pressing the dough to rotis as the dough is too moist to handle . Grease your fingers and sheet with ghee to ease pressing into rotis .
