Healthy Coffee Cookies

Mocha Coffee Cookies are mildly flavoured and melt in the mouth. The chocolate and coffee flavours blend together to give a rich and satisfying taste. This recipe is part of the Plattershare Belly Nirvana Campaign with Places of Origin- Indian tastes delivered.

Ingredients
  

  • 1 cup all purpose flour
  • 1/4 cup almond flour
  • 2 tsp leo coffee powder
  • 2 tsp mocha hot chocolate powder
  • 1/8 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 cup butter
  • 1/2 cup brown sugar

Instructions
 

  • The butter should be at room temperature while using.
  • Sieve all purpose flour, almond flour, baking soda and baking powder together.
  • Mix butter and brown sugar together, beat it well. Add breakfast blend coffee powder and mocha hot chocolate powder to it.
  • Now, mix the flour into coffee mocha mixture. Do not knead it hard. Keep it aside for ten minutes.
  • Pre-heat oven at 200C.
  • Grease the tray with a little clarified butter. Take small lemon sized balls, flatten and keep them at a distance apart.
  • Bake it for 10 minutes at 200 degree centigrade. Allow to cool completely.
  • Tasty, melt in the mouth cookies are ready.

Notes

The butter should not be hard or cold. Keep it out for two hours before using.
