A baked potato, or jacket potato, is a potato that has been baked for eating. When well cooked, a baked potato has a fluffy interior and a crisp skin. This recipe is served with fillings and condiments such as butter, cheese and vegetables.
Yield / Serves
Large Potatoes 4
Capsicum chopped 1 cup
Ginger grated 1 tbsp
Garlic chopped 1tbsp
Green chillies Chopped 2
Cottage cheese 50grams
Onions chopped 1 cup
Cheese slices 2
Mayonnaise 1 tbsp
Veeba chilli Oregano sauce 1 tbsp
Piri piri seasoning 1tbsp
Oil 1 tbsp
Arrange all ingredients by chopping and grating .
Wash your potatoes and make a slit in middle with knife
Take a glass tray ,fill it half with water ,place your potatoes in middle and microwave these potatoes for 10 minutes to cook in water bath.
Till the potatoes get cooked,heat up the oil and saute all veggies with a lil salt in a kadai.
Cook for 10 minutes and then add cottage cheese n cook for 5 minutes more.
Now check your potatoes and scrape out the potato flesh from inside with the help of a fork.
Now mix veeba sauce,mayo ,sauteed vegetables and potato mash , pepper and salt if you need .
Fill potato jackets with this mixture, seal with a cheese strip and bake in OTG on 200 degrees for 5 minutes.
Garnish with mayo, paprika seasoning and serve hot.
