Glutten Free Quesadilla Using Jiwa Glutten Free Atta

Quesadilla is Mexican Delicaciy, a sister arm of the Italian Pizza in which two tortillas are used to prepare a nice cheesy stuffing and toasted on both sides.
Served with dipping, they make amazing appetizers. This delicacy was improvised to make it Gluten Free using Jiwa gluten Free atta in collabroation with Plattershare. The amount of cheese used was just sufficient to let the flat breads stick together and a nice spicy filling to make up for the reduced cheesy flavours.

Ingredients
- Jiwa Gluten Free Atta 1 cup
- 1 onion chopped
- 1/3 rd cup of green yellow and red capscium each chopped
- 1 green chili chopped
- 1 tbsp garlic chopped
- 1/3 rd cup grated cheese
- 1 tsp pizza seasoning
- 1 to mato finely chopped
- 1/3 rd cup boiled corn
- 1 tbsp oil

Instructions
- Heat oil for cooking in a pan. Add onions, garlic and green chili and cook till it turns brown

- Add chopped capsicum, corn and cook for 4 to 5 minutes on low flame.
- Add salt for seasoning, pizza seasoning. The stuffing is ready.
- Knead flour by adding water little at a time
- Roll out two flat breads
- Lay out first flat bread. Spread the stuffing and top it with cheese.
- Place the second flat bread. Cook the Quesadilla on both sides till done.
- Cut into slices and serve with salsa
