Though Veggies loaded Quesadilla is a Mexican dish but I have prepared it with some twists to give it Indian flavour .

- For batter
- 1.5 cup Rava
- 3/4 cup water
- 1/2 cup curd
- 1/4 tsp Salt
- 1 pinch baking soda
- For Fillings
- 2 boiled potatoes sliced
- 2 onions sliced
- 2 olives
- 1 capsicum sliced
- 1/2 canned beans
- 1 cheese cube sliced
- 2 tsp red chilli sauce
- 1/2 tsp salt
- 1/2 tsp chilli powder
- 1/2 tsp oregano
- Oil for frying
- 2 tsp butter

- For preparing batter mix rava, curd, water, salt and baking soda in a bowl, mix them properly to make a smooth batter. Keep it aside for 20 mins.
- After 20 mins , prepare dosa using the prepared batter.
- Heat oil n fry boiled potato's slices. Fry them till both sides become golden .Take out slices from oil n place them on towel tissue.
- Now grease another pan with butter, place dosa, keep slices of onion, capsicum , tomato, potato, beans, olives, salt, oregano, chilli sauce etc.over it.
- Fold the dosa . Veggies loaded Quesadilla is ready to be relished with favorite dip.
Notes
We can also use tortillas instead of preparing dosa for making this recipe.
