    Though Veggies loaded Quesadilla is a Mexican dish but I have prepared it with some twists to give it Indian flavour .

    Ingredients
      

    • For batter
    • 1.5 cup Rava
    • 3/4 cup water
    • 1/2 cup curd
    • 1/4 tsp Salt
    • 1 pinch baking soda
    • For Fillings
    • 2 boiled potatoes sliced
    • 2 onions sliced
    • 2 olives
    • 1 capsicum sliced
    • 1/2 canned beans
    • 1 cheese cube sliced
    • 2 tsp red chilli sauce
    • 1/2 tsp salt
    • 1/2 tsp chilli powder
    • 1/2 tsp oregano
    • Oil for frying
    • 2 tsp butter

    Instructions
     

    • For preparing batter mix rava, curd, water, salt and baking soda in a bowl, mix them properly to make a smooth batter. Keep it aside for 20 mins.
    • After 20 mins , prepare dosa using the prepared batter.
    • Heat oil n fry boiled potato's slices. Fry them till both sides become golden .Take out slices from oil n place them on towel tissue.
    • Now grease another pan with butter, place dosa, keep slices of onion, capsicum , tomato, potato, beans, olives, salt, oregano, chilli sauce etc.over it.
    • Fold the dosa . Veggies loaded Quesadilla is ready to be relished with favorite dip.

    Notes

    We can also use tortillas instead of preparing dosa for making this recipe.
