Ingredients
Produce
- 1 cup Drumstick Bark fleshy paste
- 1 Bell Peppers smoked
- 1 Tomato smoked
- 2 Chillies green
- 5-6 Curry Leaves
Spices and Flavorings
- 1 tsp Turmeric Powder
- 1 tsp Garlic minced
- 1 tsp Poppy Seeds
- 1 tsp Radhuni Seeds wild celery seeds
Other
- 1 tsp Peanuts
- 1 tbsp Mustard Oil
Instructions
- Cut the drumstick bark into smaller pieces and boil until tender. This helps soften the bark and makes it easier to blend into a smooth paste.
- Smoke the bell pepper and tomato over an open flame or under a broiler until the skins are blackened and blistered. Peeling off the charred skin intensifies the smoky flavor and gives the paste a richer texture.
- Combine the boiled drumstick bark, smoked bell pepper, smoked tomato, green chilies, minced garlic, turmeric powder, poppy seeds, peanuts, and curry leaves in a blender or food processor.
- Blend until a smooth paste is formed. Add a little water if needed to facilitate blending.
- Heat the mustard oil in a pan over medium heat. Add the radhuni seeds and sauté for a few seconds until fragrant. This releases their aromatic oils and adds depth of flavor to the paste.
- Add the drumstick bark paste to the pan and stir continuously. Cook for about 15-20 minutes, or until the paste dries out slightly and the flavors meld together.
- Serve hot with steamed rice.
Recipe Notes
Expert Tips
- For extra crispy fritters, double fry them. Fry once at a lower temperature to cook through, then again at a higher temperature for crispiness.
- Adjust the amount of spices to your liking. If you prefer a milder flavor, reduce the amount of chili powder. For extra heat, add a pinch of cayenne pepper.
- Don't overcrowd the pan when frying. This will lower the oil temperature and result in soggy fritters. Fry in batches for best results.
Storage Instructions
- These fritters are best enjoyed fresh. However, leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a preheated oven or air fryer for a few minutes to restore crispness.
