- 1 cup Yogurt
- 1 tsp Vanilla Extract
- 1 tbsp Honey optional, to taste
Fruits
- 2 cup Fruits bananas, chopped; berries, etc. – use your favorites!, kiwi, mango, mixed
Other
- 1 sheet Parchment Paper or silicone baking mat
Instructions
Preparation
- Line a large baking sheet with parchment paper.
Mixing the Yogurt
- In a medium bowl, combine the plain yogurt and vanilla extract. If using honey, add it now and stir until well combined.
Spreading and Freezing
- Pour the yogurt mixture onto the prepared baking sheet. Spread it evenly into a thin layer using a spatula or the back of a spoon.
Adding the Fruit
- Sprinkle the chopped mixed fruits evenly over the yogurt layer.
Freezing
- Place the baking sheet in the freezer for at least 3-4 hours, or until the yogurt bark is completely frozen solid. Freezing for longer will result in a firmer bark.
Serving
- Once frozen, remove the bark from the freezer and let it sit at room temperature for a few minutes to slightly soften. Break or slice into pieces and serve immediately. Store leftover bark in an airtight container in the freezer.
Recipe Notes
Expert Tips
- For extra flavor, consider adding a squeeze of lemon juice or a pinch of cinnamon to the yogurt mixture.
- Use a variety of colors and textures in your fruit selection for a visually appealing and interesting bark.
- To prevent the fruit from sinking to the bottom, gently press them into the yogurt layer after spreading it.
- If you don't have parchment paper, a silicone baking mat works equally well.
