Ingredients

- 2 medium Potatoes cubed
- 1 cup Drumsticks chopped into 2-inch pieces
- 1 large Tomato chopped
- 1 Chili green, slit lengthwise

Instructions
- Heat the oil in a pan over medium heat. Add the mustard seeds and cumin seeds. Let them splutter and release their aroma. This tempering process infuses the oil with flavor.
- Add the chopped onion and curry leaves to the pan. Sauté until the onions soften and turn translucent, about 5-7 minutes.
- Add the cubed potatoes and chopped drumsticks. Fry for 2-3 minutes, stirring occasionally, to lightly brown the vegetables.
- Add the chopped tomato, salt, and turmeric powder. Fry until the tomato breaks down and becomes mushy, about 5-7 minutes. This creates a rich base for the curry.
- Add the chili powder and slit green chili. Fry for another minute to bloom the spices and enhance their flavor.
- Pour in enough water to cover the vegetables. Bring the mixture to a simmer, then reduce the heat to low, cover the pan, and cook until the potatoes and drumsticks are tender, about 15-20 minutes. Add a little more water if needed to maintain desired gravy consistency.
- Stir in the chopped cilantro. Remove from heat and serve hot.
